Our Employees' Thanksgiving Recipe Favorites

Thanksgiving is a great time to get together with loved ones to catch up, spend quality time together, and eat great food! If you’re looking to refresh your recipes or incorporate new favorites, we asked our staff to share their favorites.

Sweet Potato Casserole Bites by Judi Dardanelli

Sweet Potato Casserole Bites by Judi Dardanelli, complete with toasted marshmallows and walnuts on top.

Ingredients:

  • 1 ½ lbs sweet potatoes scrubbed but not peeled, and sliced ⅓" thick
  • 2 teaspoons brown sugar
  • ¼ teaspoon cinnamon
  • approximately 70 mini marshmallows
  • pinch of salt
  • cooking spray

Instructions:

Step one: Preheat oven to 425 degrees F.

Step two: Line baking sheet with parchment. Place sweet potato slices on the sheet.

Step three: Sprinkle the sweet potato slices with a pinch of salt, ¼ teaspoon cinnamon, and 2 teaspoons brown sugar. Spray the slices with cooking oil.

Step four: Bake at 425 for 15 minutes.

Step five: Top each slice with 2 - 3 mini marshmallows and a walnut if desired.

Step six: Broil 1 ½ minutes, or until marshmallows are toasted.

Pumpkin Spice Cookies by Jessica Beckstead

Pumpkin Spice Cookies by Jessica Beckstead topped with an orange frosting.

Ingredients:

  • 1 package yellow cake mix (regular size)
  • 1/2 cup quick-cooking oats
  • 2 to 2-1/2 teaspoons pumpkin pie spice
  • 1 can (15 ounces) solid-pack pumpkin
  • 1 large egg, room temperature
  • 2 tablespoons canola oil

Frosting:

  • 3 cups confectioners' sugar
  • 1 teaspoon grated orange zest
  • 3 to 4 tablespoons orange juice

Instructions:

Step one: Preheat oven to 350° F. Combine cake mix, oats and pie spice.

Step two: In another bowl, beat pumpkin, egg, and oil; stir into dry ingredients just until moistened.

Step three: Use 2 tablespoonfuls of mixture onto baking sheets coated with cooking spray; flatten with the back of a spoon. Bake until edges are golden brown, about 18-20 minutes. Remove to wire racks to cool.

Step four: For frosting, combine confectioners' sugar, orange zest and enough orange juice to achieve desired consistency.

Step five: Spread over cooled cookies.
